The 6-Step Bilona Method
How authentic Valona Vritti ghee is crafted step-by-step from raw milk to aromatic granular crystals.
Procuring Fresh Milk
Whole buffalo milk is sourced daily from local dairy communities in Devbhumi Dwarka district, Gujarat.
Boiling & Natural Cooling
Milk is gently boiled in traditional vessels to eliminate bacteria and allowed to cool to lukewarm temperature.
Culturing into Curd (Dahi)
A small portion of natural curd starter is added, allowing whole milk to ferment overnight into thick, probiotic-rich curd.
Bi-Directional Wooden Churning
The curd is churned using a traditional wooden churner (Valona) in clockwise and counter-clockwise motions to separate fresh butter (makkhan).
Slow-Flame Clarification
Makkhan is slowly heated over controlled flame, allowing water to evaporate and milk solids to caramelize naturally.
Natural Granular Setting (Danedar)
The golden liquid is filtered and allowed to cool slowly at room temperature, forming signature aromatic granular crystals.
Why Does Authentic Bilona Ghee Cost More?
Commercial table ghee is usually produced by separating fresh cream from milk using high-speed centrifuge machines. The leftover skimmed milk is sold separately, making industrial cream-separated ghee cheaper to manufacture.
In contrast, authentic Bilona ghee uses the whole milk. It takes 25 to 30 liters of pure milk to make just 1 kg of Bilona ghee. The extensive time, hand-churning labor, and lower yield make authentic Bilona ghee an artisanal, premium dairy product.
